Ena’s Little Black Book on the Couvent des Minimes Provence, lavender fields, stone cloisters, and the one hotel we wished we’d booked a second night at.
“We said goodbye the next morning already kicking ourselves for not booking a second night.”

The approach alone tells you something. The hotel sits just outside the hilltop village of Mane, surrounded by lavender fields and the kind of Provençal countryside that makes you wonder why you ever spend time in cities. The building, a 17th-century convent, stone-walled and quietly imposing, has kept every architectural grace note: the chapel, the bell tower, the cloister, the monks’ old footpath through the grounds. Behind those weathered walls is a property that layers considered luxury over all of it without ever announcing itself too loudly. We arrived off the back of a full day in the lavender fields, running on rosé and golden-hour light. The hotel absorbed all of it without missing a beat.

The rooms are bright and unhurried, whitewashed walls, natural oak, Provençal linens, windows framing the mountains or the terracotta rooftops of Mane. What nobody warned us about was the bathrooms: floor-to-ceiling glass, opening directly onto the bedroom. For a group of girlfriends sharing rooms, this design decision produced some of the most sustained laughter of the entire trip.

We didn’t make it to the spa, one of several things we would do differently with a second night. The grounds alone could fill a day: garden terraces stepping up the hillside, seemingly miles of lavender stretching out in front. Since our visit, the hotel has undergone a full renovation and reopened in 2023 as a Relais & Châteaux property with a Michelin-starred restaurant and L’Occitane’s global flagship spa, the first Ecocert-certified wellbeing centre in the world. It was already exceptional. Apparently it has only gotten better.
Insider note
Book two nights minimum, one is enough to appreciate it, not enough to actually slow down. Lavender season runs late June through early July, but May and September offer the same light with far fewer people. And book the spa in advance; we didn’t, and we’re still thinking about it.
